Unexpected company? Having the buddies over for the game? This simple and delicious recipe will have them asking for more!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 15-16 oz can black beans
  • 1 Tablespoon Sour Cream
  • 1/2 c. cheddar or colby jack cheese, shredded
  • Spices (suggest black pepper, chili powder, onion powder, and salt)
  • Tortilla chips (optional)
  1. Step 1

Open the can of beans and drain the excess liquid. Place the beans in a small sauce pan on medium-low heat, stirring occasionally.

  2. Step 2

When the beans are warm, add the sour cream. Stir. Add the cheese. Reduce heat to low and simmer for 5 minutes, stirring frequently.

  3. Step 3

Add spices to taste. Serve warm with tortilla chips or use for burrito or enchilada stuffing.

Tips & Warnings
  • For a low-fat alternative, use non-fat sour cream and part-skim mozzarella cheese.
  • For a tex-mex variation, add McCormick's Grill Mates BBQ seasoning. Serve with sour cream, guacamole, and salsa.
  • If you plan to serve the beans in a keep-warm dish, add an extra tablespoon of sour cream to keep the dip from getting too thick.
  • It is essential to stir the beans while they are cooking to avoid burning and sticking to the bottom of the pan.

on 10/9/2008 Good with tortilla chips! I'm also going to make this for a pasta dish (without the sour cream). Great tips.
