Replace salsa next time with this chunky and savory alternative. I serve it with blue corn tortilla chips and it is a huge hit!

Instructions

Things You'll Need:

  • 1 bag blue corn tortilla chips
  • 2 c. cooked corn
  • 1 peeled and diced avocado
  • 1 jalapeno pepper chopped
  • 1/2 c. chopped sweet onion
  • 1/2 c. mango
  • 1/2 c. red bell pepper
  • 2 Tbsp. olive oil
  • 1 Tbsp. minced garlic
  • 1 1/2 tsp. ground cumin
  • 1 Tbsp. red wine vinegar
  • 1 tsp. fresh lime juice
  • 1 tsp. dried oregano
  • salt and pepper
  1. Step 1

    Combine all of the ingredients listed above (except the chips!) and mix well. Remember to add salt and pepper to taste.

  2. Step 2

    Refrigerate overnight to let it marinate. It needs a few hours at least.

  3. Step 3

    Serve it cold with a basket of blue corn tortilla chips.

Tips & Warnings
  • Adjust the recipe to suit your taste. Instead of mango you could use papaya.
