Chicken Cacciatore is a favorite here at my house. It's very easy to make in the crock pot. And cooking all day on low heat causes the chicken to become very tender and flavorful.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 - 6 boneless skinless chicken breasts
  • 1 large onion
  • 2 - 3 green peppers
  • 1 jar spaghetti sauce
  • 1 cup mushrooms
  1. Step 1

Cut your chicken breasts into chunks or strips.
Cut your onion & the peppers into strips.

  2. Step 2

Place chicken in the bottom of your crock pot & season with salt, pepper & any other seasonings you usually use for chicken.

  3. Step 3

Pour jarred spaghetti sauce over chicken and stir it so the chicken and sauce are mixed well.

  4. Step 4

Lay peppers, onions and mushrooms over sauce.

I just let the rising heat of the chicken cook the vegetables. I don't stir them into the sauce until about an hour and a half before the end of the cooking time. They stay a little crisper this way.

  5. Step 5

Cook on low heat 7-8 hours, or high heat 4-5 hours.

  6. Step 6

Serve over pasta, rice or potatoes!!

    Enjoy!

Tips & Warnings
  • You can substitute or add any vegetables you like. I've tried it with squash, carrots and snow peas.
  • For more color add yellow or red peppers as well.
