With its creamy nougat center, dipped in caramel and rolled in salty, fresh pecans, pecan logs are sure to gain attention at every holiday gathering.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 (7 1/2) Jar Marshmallow Cream
  • 1 Box Powdered Sugar
  • 1 tsp. Vanilla
  • 1/4 tsp Butter Flavoring
  • 1 Bag Of Caramels
  • 1 tbsp Butter
  • 2 tbsp Canned Milk
  • 4 C. Pecans, Chopped
  1. Step 1

    In a medium mixing bowl combine marshmallow cream, powdered sugar, vanilla and butter flavoring. Stir until mixed throughly. Knead ingredients with hands, until all powdered sugar has been absorbed.

  2. Step 2

    Divide mixture into 8 even amounts. Roll each divided mixture into a log. Wrap each log in plastic wrap and place on wax paper lined baking sheet in freezer.

  3. Step 3

    Spread chopped pecans out a piece of wax paper.

  4. Step 4

    In a heavy, 1 1/2 quart sauce pan combine caramels, butter and canned milk. Heat mixture over low heat, stirring occasionally, until caramels are fully melted. Remove sauce pan from heat.

  5. Step 5

    Remove the logs from freezer. Using a fork, dip a log, one at a time into the caramel mixture, until fully coated. Lift the log out of the mixture with fork. Allow the excess caramel mixture run off.

  6. Step 6

    Using a clean fork and a circular motion, roll the carameled log in the chopped pecans, being sure to coat the entire log with nuts.

  7. Step 7

    Wrap the pecan logs in plastic wrap and place them on the waxpaper lined baking sheet. Refrigerate until ready to serve.
