How to make gluten free chocolate chip cookies

Incidences of celiac disease and gluten intolerance are on the rise. For those diagnosed with either of these conditions finding food worth eating can be quite the challenge. Combining a special gluten free flour with the classic ingredients in this recipe allows everyone to once again enjoy this ultimate comfort food.

Instructions

Things You'll Need:

  • 1 cup butter or canola oil
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 and 1/2 cup gluten free flour
  • 1 cup chocolate chips
  • cookie sheet
  1. Step 1

    Mix the butter or oil together with both sugars. If using butter, the results will be better if you let the butter soften on the counter before using. Mix well until the mixture is grainy. Break up any lumps of brown sugar.

  2. Step 2

    Add eggs, baking soda, vanilla, and salt. Mix well.

  3. Step 3

    Add one and one half cup of gluten-free flour. Once the flour is added, the dough should be soft but not overly sticky. If needed add more flour by the tablespoon until it is easy to handle but not too dry.

  4. Step 4

    Add chocolate chips.

  5. Step 5

    Place by the spoonful on cookie sheet. Bake at 350 degrees until lightly browned.

Tips & Warnings
  • I use Domata Living Flour for all my baking. It is the closest I have found to "real" flour and is well worth the money. Their website is www.domatalivingflour.com
  • Gluten-free baked goods often take extra time to cook. Wait for the cookies to turn golden brown or you will have gooey cookies...which is not so good with gluten-free food!
  • Check all ingredients carefully to ensure they are gluten free.
