Things You'll Need:
- Two cups of tamari soy sauce
- one to two cups of fresh pumpkin seeds
- two tablespoons of peanut oil
- one teaspoon kosher or your favorite seasoning salt

Tamari soy sauce has a rich, savory salty sweet taste that is the perfect condiment to pumpkin seeds. First, hollow out your pumpkin and rinse fresh pumpkin seeds and let soak in fridge for one to two hours in half a cup of tamari soy sauce. Remove, and let drain.

Pre-heat your oven to 250 degrees. Add oil to your frying pan and turn burner onto medium high heat. Add pumkin seeds when the oil is hot and sautee for a minute, coating them evenly on all sides.

Spread the pumpkin seeds out evenly on baking sheet. Sprinkle with kosher or seasoning salt and bake for 30 minutes or until browned. Remove and let pumpkin seeds cool on wax paper or a paper towel for a few minutes. Then, share and enjoy. Can be eaten whole.
