Making your own pickled ginger can be very rewarding. It is much more flavorful than the pink stuff you get at restaurants or in jars at the market. It’s simple, and can be eaten with any type of meal to cleanse the palate and help with digestions. Ginger can be found in most major markets nowadays. When you purchase it, make sure it is firm, with no soft, dark, or moldy spots.

Instructions

Things You'll Need:

  • ½ lb fresh ginger
  • 1 tsp salt
  • 3 cups water
  • 1 cup rice wine vinegar
  • 3 Tbs sugar
  1. Step 1

    Peel the ginger and slice it very thin. Put it in a large bowl.

  2. Step 2

    Boil the 3 cups of water and 1 tsp salt. Pour it over the ginger and let it sit for about two minutes. Drain the ginger, reserving ½ cup of the water.

  3. Step 3

    Put the ginger, reserved water, vinegar, and sugar into a jar and seal tightly. Let it sit for a minimum of 3 hours, but it’s even better if you let it rest in the fridge overnight. Then enjoy!!
