Phase one of the South Beach Diet is difficult, and you need to be creative with recipes. Traditional lasagna recipes are full of fat and carbohydrates. But by making some substitutions, you can retain the flavors of lasagna without the extra calories and carbs. Does this Spark an idea?

Things You'll Need

  • 1 head cauliflower (or large bag frozen)
  • 1 15-ounce can crushed tomatoes
  • 16-ounce container part-skim ricotta cheese
  • 8 ounces part-skim mozzarella, grated
  • Salt and pepper
  • Italian seasoning, optional

Instructions

      Preheat your oven to 350 degrees Fahrenheit.

      Boil or steam the cauliflower until slightly soft. Drain it and pour it into a baking pan or casserole.

      Add the tomatoes, ricotta cheese and half of the grated mozzarella. Mix all together. Season with salt and pepper; add a teaspoon or two of Italian seasoning if you like.

      Sprinkle the top with the remaining mozzarella.

      Bake at 350 degrees Fahrenheit until the cheese begins to bubble and is lightly browned.

Tips & Warnings

  • Use more or less of any ingredient according to your preference.

  • Be sure to drain cauliflower well, so the lasagna won't be watery.
