Freezing corn is one of the easier autumn chores to do. In one afternoon, (especially if you have a couple of good helpers) you can pack enough corn into your freezer to give your family a sweet taste of summer for supper on many a cold winter night.

Difficulty: Easy
Instructions

Things You'll Need:

  • corn on the cob (sweet corn)
  • large kettle
  • sharp knife
  • Ziploc pint freezer bags
  1. Step 1
     

    Peel the corn and remove as much of the silk as possible.

  2. Step 2
     

    Boil about 3-4 inches of water in a large kettle. When the water comes to a boil, fill the kettle with the peeled corn. Cover the kettle with a lid. The covered kettle will fill with steam and cook the corn. Allow the corn to steam cook for 7 minutes. You won't be cooking the corn all the way through, just enough to set the starch.

  3. Step 3
     

    While the corn is steaming, run cold water into both sides of your sink.

  4. Step 4
     

    Using tongs, retrieve the hot corn from the kettle and drop the ears into the water on one side of the sink. Once the sink is full of corn and the water is no longer cold, transfer the corn to the other sink to help the corn cool rapidly.

  5. Step 5
     

    Using a sharp knife, cut the corn from the cooled cobs. Take care to cut only the kernels and not into the cob.

  6. Step 6
     

    Scoop 2 or 3 cups of the kernels into a pint freezer bag. Zip the bag squeezing the air out of the bag as you go. Pack bags flat into your freezer. To cook, empty frozen corn into a kettle and cover with water. Bring to a boil and cook for 7 to 10 minutes or to taste.
    Season with butter, salt and pepper.
