Spare the pig this year and opt for something healthier and friendlier. There are plenty of commercially available vegetarian roasts. Tofurky brand roasts are most common, and can generally be found at any grocery store from November to January. There's also the option of making your own protein dish like a tofu meatloaf.

Replace meat side dishes with mushroom or nut-based gravies. Plenty are available in stores and fairly simple to make. Stuffing can be made as dish by itself--no need to actually stuff it into something. Some other great animal-free options for the holidays include spicy carrot and orange soup, and rice pilaf with apples and cranberries.

Make vegetarian holiday dishes from around the world, such as potato latkes with applesauce, Danish kringle or Hungarian poppy seed cookies.

Commit to purchasing or creating only animal-free gifts for friends and family. This means, of course, no leather, suede or fur. Also, check cosmetics for animal products, as many contain fats and gelatin. Look for labels that have "Not tested on animals" or something similar.
