Cooking spices and herbs are flavorful food enhancers that should be stored properly to maintain as much as possible of their original freshness. Heat, light, moisture, air and time are major enemies. To keep your spices and herbs fresh and flavorful, consider these tips and strategies.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  1. Step 1

According to government guidelines, ground spices and herbs can be kept for up to two years, and whole varieties up to four years.

  2. Step 2

Cooking spices and herbs should be stored in a cabinet or drawer to avoid damage from light.

  3. Step 3

To keep flavor from deteriorating, they should not be stored near or above heat sources like ovens, ranges, microwaves.

  4. Step 4

When storing in a refrigerator or freezer, make sure they are in airtight containers to prevent damage from moisture.

  5. Step 5

Test the spice or herb before using by crushing and smelling. If there is an aroma the spice is still usable; if not, discard it.

  6. Step 6

Write the date you purchased the spice or herb on the jar. Check every six months for freshness.

  7. Step 7

Consider buying fresh quality spices and herbs in small quantities--enough for a recipe to avoid having to store them.

on 10/2/2008 Great idea. I always wondered about how to store them. They are expensive, and I want them to last.
