This quick bread is fruity, moist, and not-too-sweet. Perfect for breakfast, brunch, for snacking, or to wrap up for a gift!

Instructions

Things You'll Need:

  • 3 cups flour
  • 1 tsp salt
  • 2 cups sugar
  • 1 1/4 tsp baking soda
  • 1 tbsp cinnamon
  • 4 eggs, beaten
  • 1 1/4 cup oil
  • 1 cup chopped pecans
  • 1 16-oz pkg frozen strawberries, thawed
  1. Step 1

    Preheat oven to 350 F. Grease and flour two loaf pans (for larger loaves) or three loaf pans (for medium loaves, as in the photo above).

  2. Step 2

    In a mixing bowl, combine the first five (dry) ingredients, then make a well in the center.

  3. Step 3

    Add the eggs and oil, and mix thoroughly. Stir in pecans and strawberries with the juice. (Fresh berries may be used, but add a bit of apple juice for moisture.)

  4. Step 4

    Divide the batter evenly into greased and floured loaf pans. Bake at 350 F for 60 minutes (for two loaves) or 40 minutes (for three loaves). Bread is done when toothpick inserted into center comes out clean.

  5. Step 5

    Allow to cool, then loosen the sides with a knife before removing from loaf pans.

Tips & Warnings
  • Strawberry bread can be baked ahead of time and even frozen if desired.
