Recently I have started mixing my pancakes and waffles in the blender. I am not sure if this will work in all blenders, but it works great in my Vita-Mix. I am able to pour the batter right from the blender to the skillet. My batter is lump free and clean up is a breeze. I blend the dry ingredients and then add the wet ingredients. You could probably reverse the order too.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 Cups whole-wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 ½ tsp baking powder
  • ½ cup oil
  • ¼ cup honey
  • 4 eggs
  • 3 cups buttermilk
  • Blender
  • Skillet or
  • Waffle Iron
  1. Step 1

    Combine all dry ingredients, then blend in all the liquid ingredients.

  2. Step 2

    Pour the batter on a skillet set at ~275F and turn when edges appear dry. If using waffle iron follow manufacturer's instructions.

  3. Step 3

    Watch pancakes closely and remove from skillet when golden brown.

Tips & Warnings
  • These pancakes are tasty and will sneak fiber in your kids diet.
  • Waffles with this batter are very hearty.
