How to Make Bean Soup Vegetarian Style

I love Soup but especially when there is a nip in the air. My family has gotten used to eating things without red meat. Sometimes I don't use any at all. This is my version of Bean Soup vegetarian style.

Difficulty: Easy
Instructions

Things You'll Need:

  • Bag of dried beans
  • Clove of garlic
  • 1 Stalk of celery
  • 1 Large onion
  • 1 Tablespoon vegatable base
  • 1 Tomato cubed
  • 1 Can of diced carrots
  • Black pepper & salt to taste
  1. Step 1
     

    Soak Dried Beans overnight.

  2. Step 2
     

    Rinse, put beans back in pan and cover with water.

  3. Step 3
     

    Add to that garlic, celery, onion & vegetable base.

  4. Step 4
     

    Cook about 45 minutes and then add tomato.

  5. Step 5
     

    Cook about 15 minutes longer and add carrots. (If you use real carrots put them in at the beginning. I cheated.) Simmer until the beans are soft. Approx another 30 minutes.

  6. Step 6
     

    Serve up and enjoy!

Tips & Warnings
  • Add a slice of that Sugar Free Apple Pie to the meal. It's really good :+)
  • A fresh tomato slice too while you still have them in the garden.
