How to Make One Point Muffins for Weight Watchers program

If you are on Weight Watchers, there is nothing better than a simple, one point recipe to keep you on track. These muffins are so easy to make and satisfying to eat, they are almost too good to only be one point!

Difficulty: Easy
Instructions

Things You'll Need:

  • A box of cake mix
  • A can of pumpkin
  • A muffin pan
  1. Step 1

    Take one box of cake mix. Carrot or spice cake works really well since you will be using pumpkin as your other main ingredient. However, you can use any flavor and they will still come out good. Even chocolate works well, as the chocolate is strong enough to overcome the pumpkin. Empty cake mix into a bowl.

  2. Step 2

    Add one 15 oz can of pumpkin.

  3. Step 3

    Mix together and bake in muffin pans according to cake mix time and oven temperature.

  4. Step 4

    Enjoy!

Tips & Warnings
  • Great for breakfast with a little cream cheese on top for only 2 points!
  • They freeze/defrost well, so no waste if you don't want to eat them all at once.
  • Great for low fat eating, even if you aren't following the Weight Watchers program.
