How to Make Basic Slice & Bake Refrigerator Cookies

These are quick and easy to make ahead of time and store in the freezer to use when needed. Refrigerator cookies are a good basic cookie that can be used for decorating on holidays (great fun for the kiddos), or for Church charity projects. Keep some on hand for anytime you need a quick batch of cookies.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 ¾ Cup Sifted flour
  • ¾ tsp Salt
  • ½ tsp Baking powder
  • ½ tsp Baking Soda
  • 1 Cup Butter
  • 1 Cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  1. Step 1

    Sift together flour, salt, baking powder and soda. Then cream together butter and sugar in a bowl, until light and fluffy. Beat in eggs one by one. Add vanilla. Add the dry ingredients slowly to the creamed mixture, mixing well after each addition.

  2. Step 2

    Shape dough into 1 1/2- to 2-inch rolls. Wrap in foil. Chill 3 hours or overnight in refrigerator. Cut into slices 1/8- to 1/4- inch thick.

  3. Step 3

    Bake on ungreased baking sheets at 375 degrees 10 to 12 minutes.

  4. Step 4

    Remove from baking sheets and cool for 10 minutes before decorating or eating. Enjoy! (But save some for tomorrow...)

Tips & Warnings
  • For chocolate: substitute ¼ cup cocoa for the same amount of sugar.
  • For orange flavored cookies, add 1/4 cup of orange flavored drink mix (Tang is good).
