Here is a tasty, healthy recipe for Garlic Bean Soup

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1-2 cups navy or pinto beans
  • 1 package onion soup mix
  • 1 fresh tomato
  • 2 small fresh carrots
  • 1/2 medium white onion
  • 1 stalk fresh celery
  • several fresh mushrooms (optional)
  • 1/2 cup cubed lean pork (optional)
  • 2-3 small red potatoes (leave skin on)
  • 2 tablespoons minced garlic
  • 1 package onion soup mix
  • sea salt to taste
  • black pepper to taste
  1. Step 1

    Soak beans in warm water for 1/2 hour, this will soften and clean them. Wash all other vegetables and cut in cubes.

  2. Step 2

    Measure 1 cup of beans to 4 cups of water (4 servings) increase amounts of everything for larger servings

  3. Step 3

    Bring beans and water to rapid boil. Add all other ingredients. Cook for 1 -2 hours until beans are done.

Tips & Warnings
  • You can substitue chicken or beef for the pork
  • You can buy fresh garlic already minced in jars near the produce section of your grocer.
  • As with any hot food, let the soup cool some before eating so you don't burn your mouth.
