Things You'll Need:
- 1 1/2 cups onion chopped
- 3-4 tomatoes medium sized chopped (skin and seeds removed)
- 1 cup jalapeno peppers chopped (seeds removed)
- 1 cup bell peppers chopped
- 3-5 cloves of garlic minced
- 1 small can tomato paste
- 1 tbsp lime juice
- 1/2 cup vinegar
- add salt, red pepper, fresh parsley and cilantro to taste
- 2 tbsp olive oil

Step 1
Chop up all of your vegetables (for peeling tomatoes see my other article if you don't know how to do it). Also, when chopping the jalapeno peppers it is a good idea to wear gloves so that you don't get the juice on your hands and then touch your eyes, it happens every time!

Step 2
Heat up the olive oil in a pot on the stove top over medium-high heat. Place the jalapenos, bell peppers, onions, garlic, and tomatoes in the pot. Let the vegetables saute for just a few minutes to begin to soften the vegetables up a little bit. Add a little bit of salt and red pepper.

After the vegetables have softened up a little bit, add the can of tomato paste, vinegar, lime juice, and parsley and simmer for about 10-15 minutes. Add the cilantro after you have removed the salsa from the stove.

Once the salsa has cooled down, pour into a large bowl and cover. Place in the refrigerator for at least 3 hours (I usually leave it in overnight but if you are impatient go ahead and dig in before then) This will allow all of the flavors to combine. Before digging in, taste and add salt and red pepper as needed.
