Double the fun at your next party by preparing a festive two-layer party cake. A two-layer party cake is simply one cake stacked on top of another with icing in between. With a few easy tips, you can add a professional polish to your cake that will delight friends and family. Things You'll Need

  • Two Round 8- or 9-inch circular pans or two 8-inch by 8-inch by 2-inch square pans
  • Serrated knife
  • Icing knife or a wide flat knife

      Use shortening to grease the sides and the bottom of two 8- or 9-inch round pans or two 8-inch by 8-inch by 2-inch square pans. Do not use butter or oil for best results. Use shinny metal pans that reflect heat away from the cake and produce a light brown crust. Do not use darkened metal or enamel pans.

      Dust the pans with a small amount of flour and shake out excess. Pour cake batter into the pans, and bake the cakes as directed in the recipe. Place the pans in the middle of the oven for even baking.

      Remove cakes from oven and let them cool naturally. After the cakes have cooled to room temperature, place them in the freezer for 45 minutes to one hour. Remove the cakes from the freezer and gently remove from pans.

      For a professional appearance, the surface of both cakes should be flat. Most cakes, however, will rise slightly in the center. Take a serrated knife and cut the top of the cake to even.

      Frost both cakes and stack. Take a wide flat knife to smooth frosting for final appearance.

Tips & Warnings

  • Placing cakes in the freezer for roughly one hour makes carving and icing cakes easier.

  • Never place a hot cake in the freezer to avoid raising the freezer temperature and possibly spoiling other foods.

  • Avoid putting toothpicks in the center of your two layer cake. Proper carving and icing will seal the two cake layers together.
