Difficulty: Moderate
Instructions

Things You'll Need:

  • 1/4 cup flour
  • 3 lb. boneless beef chuck roast
  • 1/4 cup canola oil
  • 1 can French onion soup
  • 1 package onion soup mix
  • 1 small can mushrooms, drained
  • 2 Tbsp. flour
  • Slow Cooker
  1. Step 1

Heat the canola oil in a large skillet over medium heat.

  2. Step 2

On a large plate, spread the 1/4 cup of flour. Dredge or roll the roast in the flour, making sure the sides are covered in flour.

  3. Step 3

Place the roast in the skillet and brown on all sides.

  4. Step 4

Transfer the roast to the slow cooker. Cook on the Low setting.

  5. Step 5

Reduce the heat on the skillet to medium-low. Stir in the 2 Tbsp. of flour into the skillet and stir until it mixes smoothly with the roast drippings. Cook about 1 minute.

  6. Step 6

Add the soup, dry soup mix, and mushrooms to the skillet. Stir and bring to a boil.

  7. Step 7

Pour the soup mixture into the slow cooker.

  8. Step 8

Cover and cook the roast 8-10 hours on Low or until the meat pulls apart easily with a fork.
