How to Make Basic Crepes

This is a great basic crepes recipe. You can fill these with scrambled eggs and cheese...or fill with cream cheese and top with fruit. Be creative and enjoy!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1/2 cups milk
  • 4 eggs
  • 1 cup flour
  • 1 1/2 tsp. sugar
  • 1/8 tsp. salt
  • small skillet (8 inches)
  1. Step 1

    In a medium bowl, mix the eggs and milk until well beaten.

  2. Step 2

    In a separate bowl, mix the flour, sugar, and salt together.

  3. Step 3

    Add the flour mixture to the egg mixture and mix well.

  4. Step 4

    Cover the bowl and place in a refrigerator to chill for at least 1 hour.

  5. Step 5

    After the batter has chilled, heat the skillet over medium heat.

  6. Step 6

    Spoon about 2 Tbsp. of batter into the skillet. Roll and tilt the skillet so the batter is spread evenly over the bottom of the skillet. Remember, these are supposed to be very thin.

  7. Step 7

    Let it cook until the top is no longer shiny. Flip the crepe and cook for about 30 seconds longer.

  8. Step 8

    Put the finished crepe on a wire rack to cool. Repeat with the rest of the batter.

  9. Step 9

    Use the crepes immediately or store in the refrigerator.

Tips & Warnings
  • Place sheets of wax paper between the crepes for easy storage.
