Instructions

Things You'll Need:

  • 6 eggs
  • 1 1/2 c. milk (or 2/3 c. powdered milk and 1 1/3 c. water)
  • 1 1/2 c. flour
  • 4 T. butter, melted
  • 1/4 c. sugar
  • 2 t. vanilla extract
  • 1/2 t. maple extract
  • 1/4 t. salt
  • 1/2 c. butter or margarine
  • 1 c. brown sugar, packed
  • 1/2 t. cinnamon
  • 1/2 t. nutmeg
  • 3 bananas, halved lengthwise and sliced
  • 2 t. vanilla or rum extract
  1. Step 1

    Make the crepes:
    Combine all ingredients and whisk until smooth, or mix in a blender. Melt 1 t. butter in a skillet. Pour 1/4 c. batter into the center of the skillet, and lift and tilt skillet to spread over entire bottom. Cook until lightly browned (the top will start to look dry, especially around the edges). Flip and cook another 45-60 seconds, or until browned.

  2. Step 2

    Make the bananas foster sauce:
    Melt the butter or margarine over medium heat. Add the brown sugar, cinnamon and nutmeg. Stir well. Cook until the consistency of a thick syrup, about 5 minutes. Add the sliced bananas and cook for 3-5 more minutes. Remove from heat and add vanilla or rum extract.

  3. Step 3

    You can fill the crepes with the sauce and roll them up, or fold the crepes and top with the sauce. Either way is delicious.

Tips & Warnings
  • Both the crepes and the sauce can be frozen. To freeze the crepes, roll or fold and place in a freezer-safe plastic bag. Reheat in the microwave or in the oven at 350 degrees for about 5 minutes. To freeze the sauce, let it cool completely and then pour in to freezer safe bags or storage containers. To reheat, thaw in the refrigerator or microwave and heat through in the microwave or on the stove.
  • The bananas foster sauce is also delicious over pancakes, french toast, oatmeal,ice cream, or stirred into plain yogurt.
