A good cake has a few key elements to it: Looks, taste, texture, moistness and color. Sometimes it can be hard trying to get all of these elements together in one cake. This recipe for this 7UP Lemon Pound Cake incorporates everything. Hopefully you won't be disappointed.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1/2 cups butter
  • 3 cups sugar
  • 5 eggs
  • 3 cups flour
  • 2 Tablespoons lemon extract
  • 3/4 cup 7UP
  1. Step 1

Preheat oven to 325 degrees. Grease and flour a bundt or 10 inch tube pan. Make sure you do this well.

  2. Step 2

Using a stand mixer (do not use a hand mixer) cream sugar and shortening together. Beat until light and fluffy.

  3. Step 3

Add eggs one at a time. Beat well.

  4. Step 4

    Add flour.

  5. Step 5

    Beat in extract and 7UP.

  6. Step 6

Pour into well greased and floured bundt or tube pan.

  7. Step 7

Bake at 325 degrees for 1-1/4 hours.

Tips & Warnings
  • Make sure you use a stand mixer not a hand mixer.
  • Use real butter.
  • If you don't grease and flour your pan well, your cake will stick to the pan.
  • Don't overcook
