This bread is delicious and healthy.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup packed dark brown sugar
  • 1/3 cup butter
  • 1 cup chopped dates
  • 3/4 cup chopped nuts of your choice
  • 3/4 cup orange juice
  • 1 packed tablespoon grated orange rind
  • 2 beaten eggs
  1. Step 1

    Heat oven to 350 degrees.

Butter an 8 inch loaf pan. Line the bottom and butter the lining.

  2. Step 2

Mix together, well, the flours, baking powder, salt, baking soda, and sugar.

With two knives or a pastry blender, cut in the butter, until it resembles coarse crumbs.

Stir in the dates and nuts.

  3. Step 3

In a smaller bowl, beat together the orange juice, orange rind, and eggs.

Add the wet ingredients, all at once, to the dry ingredients.

Stir ONLY until the dry ingredients are moistened.

IF YOU OVER-STIR, YOU WILL HAVE A FLAT, DENSE LOAF.

  4. Step 4

Pour the batter into the prepared pan.

Bake for approximately 50 minutes or until the bread tests done.

Remove. Cool in pan for 10 minutes.

Remove from pan to cool thoroughly on a wire rack.

    Slice. Serve. Enjoy!
