Don't let the last of the fresh corn on the cob go to waste.
Here's a delicious recipe for leftover corn.

Difficulty: Easy
Instructions

Things You'll Need:

  • I can Black Beans
  • 2 cobs of cooked corn
  • 1 red onion or 1 Vidalia onion, finely diced
  • 1 fresh red pepper, finely diced
  • 2 small jalapeno peppers, finely diced
  • 1/2 cup balsamic vinegar
  • 1/3 cup olive oil
  • 1 1/2 tsp dijon mustard
  • 1/2 cup fresh parsley
  1. Step 1

    Drain the black beans and wash thoroughly. Add to mixing bowl.

  2. Step 2

    Gently slice the leftover corn off the cob. Add to the beans.
    Add the diced onion and diced peppers.

  3. Step 3

    Add the vinegar, oil and mustard and toss gently. Mix well, trying not to
    bruise the beans. Finely chop the parsley and sprinkle on top.

    Serve with tortilla or pita chips.
