How to Make vegetable soup the kids will love!
This soup can have several types of meat added to vary the flavor. Even the pickiest eater should love it. Does this Spark an idea?
Things You'll Need
- 46 ounce can of tomato juice
- 46 ounce can of vegetable juice
- 1 chicken or beef bouillon cube
- 2 cups water
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon basil
- 2 pound bag of frozen mixed vegetables
- 8 ounces ditalini noodles or other small noodles
- 14.5 ounce can of diced tomatoes
- 3 medium to large potatoes, diced
- 4 teaspoons sugar

Bring about 4 cups of water to a rolling boil. Cook noodles for about 10 to 12 minutes to ensure tenderness. In a large stockpot, pour in the tomato juice and vegetable juice slowly.

Add the water, garlic powder, sugar, basil and onion powder. Stir slowly so the dry ingredients will be absorbed into the juices.

Add the mixed vegetables, diced tomatoes and potatoes. Place the pot on the stove uncovered, and bring to a boil.

When potatoes are crisp tender, drain the noodles and place them in the soup. Cover the soup and turn to simmer. Let simmer for about 10 minutes.

Tips & Warnings
For variations, try adding pound of browned ground beef or ground turkey. Cook the ground beef seasoned with oregano and garlic salt for extra zing.
To make this a vegetarian soup, omit the beef or chicken bouillon and use vegetable bouillon.
Stir often, especially before adding the noodles, so it does not stick or burn.
