Fall is upon us and it is time for more soups and stews to comfort us when it rains or snows. This recipe is one of the best soups I have concocted from my love of tomato soup. You can make it either creamy or water based and both are fantastic. I prefer the cream style Tomato Basil Soup. So sit back and check out this recipe and then go and try some at home; but, don't forget the grilled cheese sandwich that is the perfect match with tomato soups.

Instructions

Things You'll Need:

  • 2 Roma tomatoes (chopped)
  • 1 clove of fresh garlic (minced or pressed)
  • 2 Tbsp fresh basil (chopped)
  • 1 can tomato soup + 1 can of water
  • 1/4 tsp pepper
  • 1/4 cup shredded parmesan cheese
  • salt to taste
  1. Step 1

    Saute the chopped tomatoes and garlic in a medium saucepan.

  2. Step 2

    Add the basil and stir.

  3. Step 3

    Add the tomato soup + water, pepper, and salt. Simmer for 10 minutes.

  4. Step 4

    Add parmesan cheese and simmer until cheese is melted.

Tips & Warnings
  • Serve with grilled cheese sandwich or any other favorite sandwich.
  • You can substitute 1 cup half and half, heavy cream, or milk for the water for a creamy soup.
  • Garnish with additional shredded parmesan cheese and fresh basil leaves for an elegant look as for entertaining or dinner parties.
  • If you use creamy based products in the soup in place of water, stir constantly while simmering so the cream or milk does not scald and burn.
