This article tells you how to make low fat Mini-Pumpkin Cakes.

Instructions

Things You'll Need:

  • 2 c. flour
  • 2 t. pumpkin pie spice
  • 3/4 t. salt
  • 3/4 t. baking soda
  • 1 1/2 c. granulated sugar
  • 1/3 c. reduced-fat sour cream
  • 1/3 c. oil
  • 3 egg whites
  • orange food coloring
  • 1 package powder sugar (16 oz.)
  • 1 t. vanilla extract
  • 1 tube orange decorating icing
  • 1 tube green decorating icing
  • 3 mini Tootsie Rolls, quartered
  1. Step 1

    Preheat oven to 350 degrees. Mix flour with pumpkin pie spice, salt, baking soda, and baking powder

  2. Step 2

    On low speed, beat sugar, pumpkin, sour cream, oil and egg whites. Tint with food coloring. Beat in flour.

  3. Step 3

    Divide batter among molds or 12 muffin cups. Bake 30-40 minutes. Cool 30 minutes. Remove from molds; cool.

  4. Step 4

    On low, beat powdered sugar, 6 T. water and vanilla until smooth. Tint with food coloring. Coat cakes with glaze; let set. Decorate with decorating icing. Add Tootsie roll stems.

Tips & Warnings
  • If you'd like, you can soften the Tootsie Rolls in the microwave for a few seconds. You can then flatten and form them into a stem-shape you like.
