- This meal uses Trader Joe's Meatless Meatballs, Trader Joe's Organic Roasted Red Bell Pepper Tomatoe Soup
- Garlic
- Onion
- Red Bell Pepper
- Cayenne
- One head broccoli
- One medium zucchini
- Olive Oil
- Earth Balance buttery spread

Step 1
Go to Trader Joes or another store that carries organic groceries and alternative meat products. Gather the items in the photo on your kitchen counter. Find your nice big iron skillet.(if you use non-stick be sure to keep your heat at low because of the toxic reaction of the non-stick surface at higher temps) I don't use non-stick anymore.

Step 2
If you want to serve this dish with rice I would start the water and rice now. After cleaning, slice one medium zucchini and one head broccoli and place in steamer for 20 minutes.
Prepare iron skillet with two tablespoons of Olive Oil and two tablespoons of Earth Balance Organic buttery spread on medium low heat. -
Step 3
browning the meatless meatballs with garlic, onion and red bell peppersNever be afraid of garlic, onions or peppers. Experiencing these things along with other spices and herbs will awaken your tastebuds and enliven your imagination with your palette to create other recipes. Now introduce at least 6 medium finely chopped cloves of garlic, one half red bell pepper chopped and one half onion chopped and the package of Meatless Meatballs and brown for 10 minutes. Now is the time to add half of the box or 16oz.(two cups) of red pepper and tomato soup with two cups of water. We will use the other half of the box of soup in another recipe soon. Add 1/2 teaspoon of cayenne. Simmer for ten minutes.

Step 4
finishedTime to serve. Prepare plates by placing veggies on a plate with any vegan dressing or a nice Earth Balance dollop or a Vegenaise Grapeseed Mayonaise heaping teaspoon on top. Now place the meatless meatballs on the plates with a few leaves of basil from your garden or some from your seasoning rack.

Earth Balance and Sea SaltYou can add anything to this recipe as a side dish depending on your time and number of people. Just add something like corn of a simple salad. Trader Joe's has great easy additions to any meal that you can keep in your cupboard or freezer until you need them. Many of their salads are pre-mixed and ready to serve.
