Things You'll Need:
- 1 pound of HOME-MADE EGG CANNELONI PASTA
- 1 pound of mushrooms, chopped
- 1/2 pound cooked ham
- 1/2 spanish onion, finely chopped
- 4 tablespoons butter
- 3 tablespoon parmesan, grated
- salt and pepper to taste
- more parmesan to sprinkle on canelloni before baking
- 2 tablespoons more butter for sauce
- 2 tablespoons flour
- 2 cups milk, hot
- 4 tablespoons extra parmesan, grated
- more salt and more pepper to taste

Step 1
Prepare the cannelloni.
Butter a shallow baking dish.
Heat oven to 375 degrees. -
Step 2
In the butter, sauté the mushrooms, ham and onion until the onion is cooked.
Add the parmesan and salt and pepper to taste.
Put about 2 tablespoons of filling on each cannelloni.
Fold the cannelloni over the filling.
Place the cannelloni on the buttered baking pan.
Over the cannelloni, sprinkle with more parmesan.
Bake for 30 minutes or until lightly browned. -
Step 3
While the cannelloni is baking make the sauce
In the top of a double boiler, melt the butter.
Add the flour gradually, stirring constantly.
When mixture is smooth, add the hot milk gradually, stirring constantly until all the milk is incorporated.
Stir in the grated parmesan.
Salt and pepper to taste.
Pour over cannelloni.
Serve.
Sprinkle with more parmesan as desired.
