Delicious pumpkin bars in just a few easy steps.

Instructions

Things You'll Need:

  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 cup pumpkin, canned
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 cups flour
  • 1/2 cup pecans, chopped
  • 1/2 cup raisins
  • Baking pan - 15.5" X 10.5" X 1"
  • FROSTING:
  • 4 ounces cream cheese, soft
  • 6 Tablespoons butter, soft
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1 teaspoon milk
  1. Step 1

    Preheat oven to 350°. Lightly grease the baking sheet and set aside.

    Whisk together the flour, baking soda, salt, cinnamon and baking powder. Set aside.

  2. Step 2

    In a large bowl, mix together the pumpkin, eggs, oil and sugar.

  3. Step 3
     

    Slow add flour mixture to egg mixture. Mix until combine.

    Fold in the pecans and raisins.

    Pour batter into baking sheet. Bake for 25 - 30 minutes. Bars are done if center springs back when toughed lightly with finger.

  4. Step 4
     

    FROSTING: Mix together cream cheese, butter, powdered sugar, vanilla and milk.

    Spread over warm pumpkin bars. Allow bars to cool prior to serving.

Tips & Warnings
  • You can substitute 1/2 cup chocolate chips for the raisins.
