This raisin nut bread is so good and moist. It makes a good breakfast bread or a snack bread with tea.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 cups raisins
  • 2 teaspoons baking soda
  • 2 eggs
  • 1 and 1 half cups sugar
  • Dash of salt
  • 1 and 1 half teaspoons vanilla
  • 1 cup chopped nuts [pecans or walnuts]
  • Loaf pan [greased and floured]
  1. Step 1

Preheat the oven to 350 degrees. Prepare a loaf pan by greasing and flouring it and then set it aside until you are ready to fill it with the batter.

  2. Step 2

Combine 2 cups of raisins, 2 cups of water and 2 teaspoons baking soda in a sauce pan and bring mixture to a boil. Remove the pan from the heat and let it cool.

  3. Step 3

In a bowl, mix 2 beaten eggs, 1 and 1 half cups sugar, dash of salt and 1 and 1 half teaspoons vanilla.

  4. Step 4

Add the raisin mixture alternately with the flour to the egg mixture. Now fold in the nuts.

  5. Step 5

Place entire mixture in a greased and floured loaf pan. Bake at 350 degrees for one hour. Check the bread at about the one hour cooking time. Bread is done when you place a toothpick in the center and it comes out clean.
