Things You'll Need:
- 2 cups raisins
- 2 teaspoons baking soda
- 2 eggs
- 1 and 1 half cups sugar
- Dash of salt
- 1 and 1 half teaspoons vanilla
- 1 cup chopped nuts [pecans or walnuts]
- Loaf pan [greased and floured]
-
Step 1
Preheat the oven to 350 degrees. Prepare a loaf pan by greasing and flouring it and then set it aside until you are ready to fill it with the batter.
-
Step 2
Combine 2 cups of raisins, 2 cups of water and 2 teaspoons baking soda in a sauce pan and bring mixture to a boil. Remove the pan from the heat and let it cool.
-
Step 3
In a bowl, mix 2 beaten eggs, 1 and 1 half cups sugar, dash of salt and 1 and 1 half teaspoons vanilla.
-
Step 4
Add the raisin mixture alternately with the flour to the egg mixture. Now fold in the nuts.
-
Step 5
Place entire mixture in a greased and floured loaf pan. Bake at 350 degrees for one hour. Check the bread at about the one hour cooking time. Bread is done when you place a toothpick in the center and it comes out clean.
