Chocolate cake lovers like myself never pass up the opportunity to learn how to bake a new chocolate we have not baked before. Where I come from, we believe in cook from scratch, with very few shortcuts. It takes effort but is well worth it. If you've never baked from scratch before, here's your chance. Enjoy

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups sugar
  • 1/2 cup cocoa
  • 1 1/2 cups (3 sticks) butter
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 1/3 cups flaked coconut
  • 1 cup of chopped pecans
  • 1 ( 7 oz.) jar of marshmallow cream
  • 9x13 inch pan
  • FOR ICING
  • 1 (16 OZ.) box powdered sugar
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup evaporated milk
  • 1/3 cup cocoa
  • 1 tsp vanilla extract1 bag of miniature marshmallows
  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Cream sugar, cocoa, and butter and add eggs and vanilla. Blend well until smooth.

  3. Step 3

    Stir in flour, coconut flakes and pecans. Bake in your 9x13 in. pan for 45 minutes. Test with toothpick to ensure it's done.

  4. Step 4

    Take out and spread with marshmallow cream while still warm. Cool.

  5. Step 5

    For icing, sift sugar and the cocoa. Cream butter with dry ingredients, then stir in milk and vanilla. Add your miniature marshmallows spread out over cake. Take your icing mix and pour over the marshmallows and cake. Enjoy!
