Things You'll Need:
- 1 9 inch spring form pan
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups blueberries
- 1/2 cup butter, softened
- 1 1/4 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 1 1/2 cups milk
- If you wish to glaze your cake you will also need
- 3/4 cup icing sugar
- 1 tablespoon warm water
- 1/2 teaspoon more vanilla OR almond extract

Step 1
Allow all ingredients to reach room temperature. If you use fresh berries, which is preferable, make sure they are dry.
Butter and line a 9 inch spring form pan.
Heat oven to 350 degrees. -
Step 2
In a large bowl, mix together the flour, baking powder, and salt.
Gently stir in the berries.
Cream together the butter and sugar.
Beat in the eggs and the two extracts until the mixture is well-blended and fluffy.
Beat in the milk. -
Step 3
Gently, FOLD the flour mixture into the butter mixture until all is well blended.
Pour batter into prepared pan and bake for approximately one hour or until the cake tests done. Use a cake tester for this or a clean sharp knife. When inserted near the centre of the cake, it should come out clean.
Place cake on rack and cool for 10 minutes.
Remove the outer rim and invert the cake over another cooling rack.
Remove the bottom of the pan and the paper liner.
Allow to cool completely. This may take several hours. -
Step 4
If you wish to put a glaze on your cake, wait until it is completely cooled.
Combine well, the sugar, water and extract.
Drizzle the cake with the glaze and allow to harden. This puts a nice finish on your cake.
Slice. Serve. Enjoy!
