A vegetarian bean dip served with tortilla chips makes a great appetizer for a party. This low-fat recipe uses canned pinto beans, store-bought taco sauce and is very easy to make. It also makes a great spread for a vegetarian sandwich. This bean dip has a bit of heat; if you prefer a milder version, use a mild taco sauce and put in less chili powder and cumin. Things You'll Need

  • 2 19-oz. cans pinto beans, about 4 cups
  • 1 cup green onions, chopped
  • 1/2 cup plus 2 tablespoons taco or picante sauce
  • 1/4 cup water
  • 1 1/2 tablespoons red wine vinegar
  • 1/2 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder

Instructions

      Put the pinto beans in a colander and rinse them well under cold water to remove some of the salt.

      On a cutting board, cut the scallions into 1/4-inch pieces with a knife.

      Put the beans in a food processor or a blender. Add the taco sauce, water, red wine vinegar, chili powder, ground cumin and garlic powder. Pulse the mixture until you form a chunky dip.

      Put the dip into a serving dish and top with the chopped scallions.
