How to bake an Irish Whiskey Bundt Cake

I love cake, and I love whiskey, so why not put them together? This cake is great for big family get-togethers like at Thanksgiving, Christmas, Hanukah, and the like. It’s also great for St. Patty’s day when you’re celebrating your Irish heritage by getting really, really drunk.

Instructions

Things You'll Need:

  • FOR THE CAKE:
  • 3 cups cake flour
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1 cup butter at room temperature
  • 1 ¾ cups sugar
  • 3 eggs
  • ¼ cup good Irish Whiskey
  • 3 Tbsp instant espresso powder
  • ¾ cup + 2 Tbsp buttermilk
  • FOR THE GLAZE:
  • ½ cup water
  • ½ cup good Irish Whiskey
  • 1-cup sugar
  1. Step 1

    Preheat oven to 350 degrees. Cream the sugar and butter and then add the eggs one at a time, beating well after each addition.

  2. Step 2

    Warm the whiskey and espresso powder in the microwave just enough to dissolve the espresso powder. When dissolved, add to the butter mixture.

  3. Step 3

    Mix all the butter/sugar mixture with the flour and buttermilk, alternating between the two. For example, 1 cup flour, mix to incorporate, then ½ cup buttermilk, then flour, then the rest of the buttermilk, then the rest of the flour.

  4. Step 4

    Bake at 350 degrees for 55-60 minutes in a greased and floured Bundt pan. When the cake tester comes out clean remove the cake from oven. Remove the cake from pan after ten minutes of cooling. Immediately add the glazing liquid (see next step) while the cake is still hot. The cake will absorb all the liquid.

  5. Step 5

    For the glazing liquid, heat water, Irish whiskey, and sugar in a sauce pan and stir until the sugar is just absorbed. Take it off the heat and glaze the cake.

Tips & Warnings
  • For a variation, you can omit the espresso powder and add the seeds from one vanilla bean instead. If you want to omit the whiskey, well then you might as well just make another cake.
  • Try serving it with a big dollop of whipped cream, or maybe some ice cream on top.
