Sofrito is a mix of spices and vegetables, which is sautéed in many Caribbean, Spanish, and Latin American dishes. There are many different versions of making sofrito the basics are green and red peppers, onions, garlic, cilantro (http://en.wikipedia.org/wiki/Cilantro), recao (http://en.wikipedia.org/wiki/Recao), and ajises (http://flickr.com/photos/fruttadi/2632801170/). You can create your own sofrito or add your own seasonings including the basics I’ve mentioned. Be creative and experiment.

Instructions

Things You'll Need:

  • 2 Green Peppers
  • 2 Red Peppers
  • Pack of garlic
  • Cilantro
  • Pack of Recao
  • Pack of Ajises
  • 2 onions
  • Olive oil
  • (4) 8 oz of plastic containers with lid
  • Blender/Food Processor
  1. Step 1

    Rinse out peppers, cilantro, ajises, and recao.

  2. Step 2

    Cut all ingredients into chunks. Note: Remove the seeds from the Green and Red Peppers

  3. Step 3

    Add about two tablespoon of olive oil in the blender/food processor. This is to make the blender/food processor easy to puree with all the spices/vegetables.

  4. Step 4

    Add all ingredients in the blender or food processor if it doesn’t fit all add in small portions.

  5. Step 5

    Puree all the ingredients and then pour in a big mix bowl.

  6. Step 6

    Keep repeating step 3 and 4 until you are finish pureeing all ingredients.

  7. Step 7

    From the mixing bowl, pour sofrito in plastic containers with lids keep one container in the refrigerator and the rest in your freezer.

Tips & Warnings
  • Just a reminder, once you use all the sofrito that is in the refrigerator; take one container out from the freezer and store it in the refrigerator. It will be thaw out and ready for the next day.
  • Sofrito in the freezer can last a long time, depending on how often you use it.
  • If you use the refrigerated container for one day out of the week then I would suggest storing it in the freezer until you are ready to use again.
