How to make Scottish Petticoat Tails Shortbread

This is about how to make little Petticoat Tails looking shirt bread..

Instructions

Things You'll Need:

  • 1/2 cup butter, but into small pieces, plus extra for greasing.
  • scant 1 1/2 cup all-purpose flour, plus 1 tablespoon for dusting
  • pinch of salt
  • 4 tablespoons superfine sugar
  • 2 teaspoons golden superfine sugar
  1. Step 1

    Preheat the over to 300F/150C. Grease an 8-inch/20cm fluted shallow baking pan.

  2. Step 2

    Mix together the flour, salt, and sugar. Rub the butter into the dry ingredients. Continue to work the mixture until it forms a soft dough. Make sure you do not overwork the shortbread or it will be tough, not crumbly as it should be.

  3. Step 3

    Lightly press the dough into the cake pan. If you dont have a fluted or plain shallow cake pan, roll out the dough on a lightly floured board, place on a baking sheet and pinch the edges to form a scalloped pattern.

  4. Step 4

    Mark into 8 pieces with a knife. Prick all over with a fork and bake in the center of the oven for 45-50 minutes until the shortbread is firm and just colored.

  5. Step 5

    Allow to cool inthe pan and dust with the sugar. Cut into portions and remove to a wire rack. Store in an airtight container in a cool place until needed.
