Oh, the smell of freshly baked banana bread. If you love banana bread but hate all the fat then this recipe is for you. It's sure to become your families favorite and they'll never guess its low fat and healthy!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 1/2 cups flour
  • 1 cup sugar
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 3 Tbs. applesauce or canned pure pumkin
  • 3/4 cup low fat or skim milk
  • 1/4 cup egg subsitute
  • 1 cup mashed bananas (2 or 3 meduim size)
  • 1/2 cup ground flax seeds or chopped nuts
  1. Step 1

    Heat oven to 350 degrees. Grease a 9x5x3 in. bread pan with cooking spray.

  2. Step 2
     

    Measure all ingredients, except bananas, into a large mixing bowl.

  3. Step 3

    Beat on medium speed for about a half minute, add mashed bananas and beat thoroughly. Pour into prepared pan.

  4. Step 4

    Bake for 55 to 60 minutes or until tooth pick inserted into center comes out clean. Cool and remove from pan.

Tips & Warnings
  • Using pure pumpkin instead of applesauce adds more fiber.
  • You can also add some cinnamon too!
  • Try not to eat the whole loaf by yourself even though it's low fat. It's hard to resist, but you can do it.
