How to Bake Easy Bran Muffins

Muffins are a delicious snack or breakfast item that are convenient to carry along with you on rushed mornings. Bran muffins are even better because they contain fiber.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  1. Step 1

    Preheat oven to 400 degrees. Prepare 12-muffin size muffin pan by inserting paper or foil cupcake liners.

  2. Step 2

    Combine 1/2 cup flour, 2 teaspoons baking powder, 1/4 teaspoon salt, and 2 tablespoons of granulated sugar in a large bowl. Add 1 teaspoon cinnamon if desired. You may substitute honey for some of the sugar, but do not add it to these dry ingredients.

  3. Step 3

    In a separate bowl place 2 eggs and beat with a fork. Then add 1-1/2 cups milk (or low-fat milk), 2 tablespoons of corn oi, and the honey if you have decided to use it. Mix well. Then add 1-1/2 cups bran cereal and allow to soak or soften the cereal. Stir well. Then add dry flour mixture from above step #2. Mix well.

  4. Step 4

    Spoon the batter into the cupcake liners filling each one to the top.

  5. Step 5

    Bake for 22 minutes. Insert a toothpick into the center of a muffin and when it comes out clean the muffins are done.
