This Cream Of Mushroom Soup contains tofu, in place of the usual milk or cream, giving a boost of protein to your meal.

Instructions

Things You'll Need:

  • 1/2 onion, chopped
  • 3 cloves of garlic, chopped
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1/4 cup sherry
  • 8 ounces soft tofu
  • 2 cups vegetable stock
  • 1/2 teaspoon Worcestershire sauce
  • salt and black pepper to taste
  1. Step 1

    In a heavy saucepan, in the olive oil, sauté the onion and garlic until soft.

    Add the mushrooms, thyme and paprika, and sauté until mushrooms soften.

  2. Step 2

    To the mixture, add the sherry and stir until combined and hot.

    Meanwhile, put the tofu and vegetable stock in a blender and blend until completely smooth.

  3. Step 3

    Add the tofu mix to the saucepan and stir briskly to combine.

    Stir in the Worcestershire sauce.

    Salt and pepper to taste. Enjoy!

Tips & Warnings
  • If you wish this soup to be vegetarian, use a vegetarian Worcestershire sauce .
