Things You'll Need:
- 1/2 onion, chopped
- 3 cloves of garlic, chopped
- 1 tablespoon olive oil
- 2 cups sliced mushrooms
- 1/2 teaspoon thyme
- 1/2 teaspoon paprika
- 1/4 cup sherry
- 8 ounces soft tofu
- 2 cups vegetable stock
- 1/2 teaspoon Worcestershire sauce
- salt and black pepper to taste

Step 1
In a heavy saucepan, in the olive oil, sauté the onion and garlic until soft.
Add the mushrooms, thyme and paprika, and sauté until mushrooms soften. -
Step 2
To the mixture, add the sherry and stir until combined and hot.
Meanwhile, put the tofu and vegetable stock in a blender and blend until completely smooth. -
Step 3
Add the tofu mix to the saucepan and stir briskly to combine.
Stir in the Worcestershire sauce.
Salt and pepper to taste. Enjoy!
