How to make soup with leftover chicken

Use that leftover chicken to make a hearty and yummy chicken soup. This is a great recipe for those cold winter nights.

Difficulty: Easy
Instructions

Things You'll Need:

  • leftover chicken
  • saucepan
  • olive oil
  • onion
  • celery
  • chicken broth
  • carrots
  • tomatoes
  • penne pasta(optional)
  1. Step 1

    In a saucepan, heat up 2 tablespoons olive oil

  2. Step 2

    Add one diced tomato, one diced onion and diced celery. Cook for 3-4 minutes.

  3. Step 3

    Now add 2 cans chicken broth and cover place lid on saucepan. Cook on low to medium to bring to a boil.

  4. Step 4

    Dice your left over chicken and add to boiling broth. Throw in half cup diced carrots and cooked penne pasta. Allow to cook for another 5 minutes

  5. Step 5

    Enjoy!
