Things You'll Need:
- small pot/saucepan
- 1/4 cup butter or smart balance
- 1.5 heads broccoli
- 1/4 cup flower
- 1.5 cups skim milk
- 1 teaspoon salt
- dash mustard (liquid or dry)
- dash cayenne pepper
- 1 cup grated cheese (cheddar and fresh Parmesan work great)
- whisk
- mug or glass measuring cup
- large microwavable container and lid

Step 1
Melt the butter in the pan on low heat.

Whisk the flour, cayenne pepper, mustard, and salt into the sauce. Cook the sauce for 2 minutes whisking.

Step 3
Microwave the milk in a glass measuring cup or mug till its hot. Then, whisk into the sauce letting it cook till fairly thick.

Stir in the grated cheese till it is melted and blended. Turn off heat and cover.

Step 5
Wash the broccoli and cut off florets into your microwavable bowl. (Preparing the broccoli can also be done before making the sauce.)

Step 6
Add a quarter cup of water to the broccoli. Cover the broccoli and microwave for 5 min. If not done, stir and then microwave the broccoli for another 2 minutes.

Step 7
Drain broccoli, uncover and stir cheese sauce, pour over broccoli and enjoy!
