This Carmel Corn recipe is a favorite at our house and I know it will become a favorite at yours too.

Difficulty: Easy
Instructions

Things You'll Need:

  • 3-4 quarts of popped popcorn prepared with salt and butter to taste.
  • 9"x13"x2" pan or larger
  • 1 cup of peanuts
  • A 2-qt. sauce pan
  • 1 cup brown sugar
  • 1 stick margarine
  • 1/4 cup light Karo syrup
  • 1/2 teas. salt
  • 1/4 teas. baking soda
  • Oven set at 250
  1. Step 1

    Place the prepared popcorn in the 9x13 pan.

  2. Step 2

    Add the peanuts.

  3. Step 3

    In the 2 qt. sauce pan mix the brown sugar, margarine, Karo syrup, and salt.

  4. Step 4

    Bring to boil over medium heat then reduce heat and simmer for 6 minutes to darken slightly.

  5. Step 5

    Stir in 1/4 teasp. baking soda. (Mixture will expand and become foamy.) Stir well.

  6. Step 6

    Pour foamy mixture over prepared popcorn.

  7. Step 7

    Place pan with corn in 250 degree oven for 45-60 minutes, stirring every 15 minutes.

Tips & Warnings
  • Stirring is tricky at first, because mixture is sticky, but it quickly gets easier as the popcorn warms through.
  • Carmel corn is best when baked for 60 minutes.
