How to make a quick and easy chicken pot pie, with minimal prep time.

Instructions

Things You'll Need:

  • two large chicken breast
  • frozen veggies of your choice
  • two cans of cream of chicken soup
  • two premade pie crusts
  • potatoes (optional)
  • pie pan (or round baking dish)
  1. Step 1

    Boil your two chicken breasts for five minutes. Remove, dice and finish boiling for another five minutes. If you want potatoes, you can boil and the same time as the chicken.

  2. Step 2

    Preheat oven to directions on pre made pie crusts. Place one pie crust in pie pan. Add chicken and one can of cream of chicken soup. Place frozen vegetables in boiling water left over from chicken for three minutes. Place last can of cream of chicken and vegetables in pie and mix with chicken.

  3. Step 3

    Place second pie crust over and pinch sides to close. Put four slits in top of crust. Bake in oven according to directions on pre made pie crust box. Let stand for a few minutes. Dig in and serve. It feed my family of four and I have leftovers for lunch the next day!!

Tips & Warnings
  • You can mix and match vegetables and meat. I normally use leftovers from the night before and any frozen veggies that I need to use up!
  • Left over Thanksgiving turkey works well and no need to reheat!
  • Left over pot roast can be used. You would want to use a different cream soup. Any one will do.
  • Make sure you pinch your pie crust shut. You don't want it to bubble out and make a mess in the stove.
