  • 1 cup coconut
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup sugar
  • ½ tsp baking soda
  • ½ cup brown sugar, packed
  • ½ cup butter
  • 1 egg
  • 1 tsp vanilla
  • ½ cup quick oatmeal
  • ½ tsp coconut extract
  • egg beaters
  • ungreased cookie sheet
  1. Step 1

    The first step for baking coconut oatmeal cookies with this recipe is to mix flour with baking powder, baking soda, and salt.

  2. Step 2

    The second step in this recipe for coconut oatmeal cookies is mix sugars and butter until light and fluffy.

  3. Step 3

    Then, add egg, vanilla and coconut extracts.
