I absolutely love sweet potatoes and these biscuits have such a great flavor! I love to bake these on a cool day in autumn.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 4 cups flour
  • 2 Tbsp. baking powder
  • 2 tsp. salt
  • 1 cup butter
  • 1 cup cooked mashed sweet potato
  • 3/4 to 1 cup buttermilk
  • Biscuit Cutter
  • Pastry Blender
  1. Step 1

Mix together the flour, baking powder, and the salt, preferably with a whisk.

  2. Step 2

With a pastry blender or 2 sharp knives, mix in the butter until crumbly.

  3. Step 3

In a separate bowl, stir together the sweet potato and the buttermilk. Then add to the dry ingredients, stirring until moistened.

  4. Step 4

Turn the dough onto a lightly floured surface. Knead until smooth and elastic, about 4-6 times.

  5. Step 5

Roll the dough to 1/2 inch thickness. Cut the dough with a biscuit cutter and place the biscuits on a lightly greased baking sheet.

  6. Step 6

Bake at 425 degrees for 10-15 minutes or until the biscuits are a golden brown.

Tips & Warnings
  • When you cut out the biscuits, never twist the biscuit cutter. This will seal the sides of the biscuit and prevent it from rising and being fluffy!
