Autumn is just around the corner and nights are getting chilly. What better way to stay warm than with a bowl of delicious soup! This soup is easy to make and will serve 8. Does this Spark an idea?

Things You'll Need

  • 2 Tbsp. unsalted butter
  • 1 onion, finely chopped
  • 1 Tbsp. sugar
  • 1 Tbs. flour
  • 1 14.5 oz. can chicken broth
  • 2 28 oz. cans crushed tomatoes
  • 1 cup half-and-half
  • 1/4 tsp. cayenne pepper
  • Salt to taste

Instructions

      Melt butter in a large saucepan over medium heat. Add onion and sugar. Cook until onion is soft and golden (about 2-4 minutes).

      Stir in flour and cook, stirring constantly for about 1 minute.

      Slowly add the chicken broth. Stir in tomatoes. Bring to a boil and lower the heat. Simmer until soup has thickened (about 15 minutes).

      Puree the soup mixture in the blender (this may need to be done in batches) and return to the pot.

      Stir in the half-and-half and cayenne pepper. Season with salt. Heat through and serve.
