Nothing tops off the perfect sundae, pie or brownie like whipped cream. However, the kind of thick, creamy whipped topping you buy in stores may be made with heavy cream or clotted cream, and adds more calories and fat to desserts than you may realize. Make your favorite indulgence less damaging to your diet by whipping your own topping at home, using nonfat dry milk instead of heavy cream. Two tablespoons of this topping adds only 18 calories to your dessert and contains less than 1 gram of fat. Does this Spark an idea?

  • Mixing bowl
  • Beaters
  • 1/3 cup cold water
  • 1/2 cup nonfat dry milk
  • 2 tbsp. lemon juice
  • 3 tbsp. sugar
  • 1 tsp. vanilla extract

Instructions

      Cool a mixing bowl and beaters in the freezer until they are thoroughly chilled.

      Combine 1/3 cup ice cold water and 1/2 cup nonfat dry milk in the mixing bowl; beat the mixture quickly for about 5 minutes until it stiffens into peaks.

      Mix in 2 tbsp. lemon juice, then slowly beat in 3 tbsp. sugar and up to 1 tsp. vanilla.

      Refrigerate for 1 hour before serving.

Tips & Warnings

  • An alternate recipe calls for 1/2 cup each of sugar, ice cold water and nonfat dry milk and 2 tbsp. lemon juice.

  • To use dry milk in other recipes, replace each cup of milk with 1/3 cup dry milk and 1 cup water.
