Here's a great quiche recipe that's healthy, vegetarian and delicious!

Instructions

Things You'll Need:

  • pie crust
  • 5 eggs (or egg beaters)
  • 1 package frozen chopped spinach
  • 1/2 cup mushrooms
  • 1/4 cup cheddar cheese
  • 1/4 cup monterey jack cheese
  • 1/4 cup milk
  • 1/4 cup onions
  • large mixing bowl
  • pie plate - glass or tin
  1. Step 1

    Preheat your oven to 350 degrees while you prepare the quiche.

  2. Step 2

    Thaw the spinach completely in the microwave. Drain the spinach until all the water is out. It helps to squeeze it out with your (clean) hands. Getting the water out is very important so that the quiche isn't soggy.

  3. Step 3

    Unroll the pie crust and lay out into the pie plate. Any pie plate, glass or tin will do. Don't trim the edges until the mixture is poured in. The quiche won't stick so you don't need to add butter or non-stick spray.

  4. Step 4

    In the large mixing bowl, beat the eggs and milk. Add the chopped onions, chopped mushrooms, both cheeses, and drained spinach.

  5. Step 5

    Pour your mixture into the pie crust. Then trim off the edges.

  6. Step 6

    Bake for 20-30 minutes depending on the size and speed of your oven. A large convection oven works faster so make sure you adjust how long the quiche bakes for. Once the crust is golden, stick a toothpick into the center of the quiche to make sure all the egg has cooked completely. The toothpick will come out clean.

Tips & Warnings
  • For a healthier quiche, you can use egg substitutes and lowfat milk and cheeses.
  • Don't let it over cook! make sure to check on the quiche.
